When choosing a plumbing contractor, you should make sure that they're licensed, insured, and have a strong reputation that they want to protect. In regards to licensing, any plumber needs to have a minimum of a C 36 plumbing contractor's license. In terms of insurance, make sure that they have general liability and workers comp insurance.
I wouldn't deal with a plumbing contractor that didn't have at least a million dollars worth of liability. These days it's very easy to use the internet to research your plumbers and make sure that they have a good reputation, that they care about protecting. In addition to license, insurance, and having a good reputation, you should also make sure that they call you back when they say that they're going to.
